The Importance of Food Education: Modern Day Kitchen Advice from Chef Bryon Freeze

The best meal I ever ate didn’t come from a grocery store, a fast food joint, or a restaurant. Instead, the food was presented on large platters that filled the table in a flood of Moroccan taste treats. We reached over the table, sampling the homemade brirouat and lamb tajine as we traded stories through delicious bites. The quality of the ingredients paralleled the quality of the conversation; this was how food was meant to be eaten.

In today’s world, not all meals are as majestic as this Moroccan feast. We eat breakfast in the car, lunch at a desk, and dinner in front of the television. We don’t take the time to enjoy our food, and therefore take little time to acknowledge the ingredients that go into creating our meals.  And who can blame us? In today’s chaotic world full of PTA meetings and conference calls, not everyone has the time to worry about the origins of the supermarket tomato. Not to mention that learning to cook can seem like an overwhelming task.

Chimps Can Cook Too

If you’re anything like me, learning to cook can sometimes seem like a daunting task. With so many different techniques to master it can all get a little overwhelming. But this week I read this article over at NPR’s The Salt: Chimps Are No Chumps: Give Them An Oven, They'll Learn To Cook. This gives me hope! After many long months of antsy anticipation, grilling season is nearly upon us! I know this because I find myself more and more frequently falling back into the endless debate of what makes "the perfect burger". There is an overabundance of opinion on the ideal size, the best condiments, which kind of lettuce or cheese or pickle should be used, how the toppings should be ordered... I’m no burger expert, but from my experiences as an enthusiastic food maker and eater, what makes a burger great is not about trendy ingredients or complex composition. The perfect burger is the result of an attention to detail in preparing and showcasing the oft-overshadowed star of the dish: the meat.

Troubleshooting in the Kitchen

This weekend was my little sisters birthday and I was thrilled to have an excuse to bake something sugary, indulgent, and delicious. I was even more excited when she told me she wanted to help, as she rarely participates in my culinary endeavors. We decided to make her favorite cookie recipe, and jumped right into the process without a second thought; we were eager to get started, and overly trusting of my pantry stock. It wasn't until halfway through that she and I realized we were missing some essential ingredients. We tried to salvage the partially assembled dough, but ultimately abandoned our efforts entirely. The failed attempt to bake together was still fun, but the experience reminded me that there are steps home chefs can and should take to avoid the disappointment of an unfulfilled recipe.
